The book was created by the people behind the Copenhagen favorite Osteria 16. Easy Pasta is their third cookbook. Where the first two cook- books are presents well-known dishes from the restaurants, Easy Pasta only contains recipes in one category: Pasta! - 36 different kinds that anyone can make. “The dishes can be made with few ingredients in a short time and taste great,” says Emil Alsbo, who together with Morten Kalto! opened the first Osteria 16 in 2014. The result is a book that is informal and straightforward. “Sometimes cooking should just be cooking. Not something with tweezers and fancy, folded napkins,” says Emil Alsbo. If you have a good base of very basic Italian ingredients in your kitchen, you hardly need to shop. One of the book’s recipes consists of just garlic, anchovies, chili and parmesan, plus pasta and olive oil. A simple dish with great umami that is also popular on Osteria 16’s Instagram profile, where a video of the dish has 16 million views. Easy Pasta contains pictures of all the dishes, impressions from trips to Italy and recommendations for restaurants around the country. Each recipe is written in both Danish and English.
